What's the difference between Chocoley Just Melt It! and store bought chocolate?
Crafted with the highest quality ingredients, Just Melt It! is substantially different than Nestle, Hershey, Ghirardelli, and other store-bought chocolate. Nestle, Hershey and Ghirardelli are manufactured much thicker, requiring large quantities of vegetable oil in order to flow properly in a chocolate fountain. Adding oil is not only a messy and cumbersome mixing process that requires varying amounts of oil from chocolate to chocolate, but a mistake in the mixing process can result in a ruined batch of chocolate or inconsistent flow in the fountain. Also, adding oil absorbs the wonderful aroma and dulls the flavor.
Scientifically, the thickness of chocolate in the melted state is measured in Viscosity on the McMichael Scale, with water being 1 Viscosity and other liquids being the number of times the thickness of water (ie. something that is 100 Viscosity is 100 times the thickness of water). Just Melt It! White is produced at 40 Viscosity. Nestle, Hershey and Ghirardelli produce their chips at 100-150 Viscosity. That's why the chips in a chocolate chip cookie retain their shape during baking.
What's the difference between Just Melt It! and other "chocolate fountain chocolates"?

In an independent taste test conducted in Provo, Utah, hundreds of consumers tasted both Just Melt It! and Sephra/Callebaut. Once again, Just Melt It! was preferred hands-down over the competition with over 72% choosing Just Melt It!.

I've seen "fondue chocolate" in retail stores. Can I use it in my chocolate fountain?
No. While these products are formulated for the fondue pot, they are not produced for use in a chocolate fountain and would require adding varying amounts of vegetable oil. Why pay a premium price for a product that won't work properly to begin with?
How should I melt my Just Melt It! chocolate?
Just Melt It! can be melted in a variety of ways...
Microwave it directly in the plastic tubs by removing the lid from the tub and microwave open tub on HALF power for 3 minutes, stir with a rubber spatula, then microwave an additional 1-2 minutes on HALF power, as needed, until chocolate is fully melted. Stir Frequently. These directions are on the tub.
Just Melt It! can also be melted in a double boiler, crock pot or steam table. Regardless of method of melting, special care should be taken to avoid adding any moisture to the chocolate. Additionally, white chocolate burns easily, so always melt on a low heat and stir frequently.
How should I store my Just Melt It!?
It’s best to store chocolate at approximately 70 degrees Fahrenheit. Avoid keeping the chocolate near heating ducts, avoid freezing and avoid contact with moisture.
How many people will each tub of Just Melt It! serve?
In general, each 2.5 lb. tub should serve between 25-30 people, or 300-375 people per 30 lb. case. Of course results may vary by the size of the items being dipped, what else people are eating at the function and whether your guests are total chocoholics. It's always better to have extra Just Melt It! on hand to prevent an uprising.
Can I re-use my Just Melt It!?
For commercial functions, Just Melt It! can not be re-used for other commercial events due to health concerns. However, many of our business customers give the leftover chocolate to the host/hostess of their catered affairs and the chocolate is fine for personal consumption. Additionally, Just Melt It! used by consumers for use in home chocolate fountains can also be re-used. Great chocolate should never go to waste.
Can I change the color of my white Just Melt It!?
Creative caterers, chefs and homemakers ask us this question a lot. The answer is yes, but you need to use an oil-based food coloring. Water-based food coloring (the type sold at the grocery store) won't work- remember water and chocolate don't mix. Of course, we sell the perfect coloring for chocolate. Get creative, have a powder blue chocolate fountain for Easter, a green chocolate fountain for St. Patrick's Day, a pink or red chocolate fountain for Valentine's Day, an orange chocolate fountain for Halloween. Let your imagination run wild, your guests will love it.
Can I add flavoring or liquor to Just Melt It!?
Yes, but you need to do it carefully and with the correct products. To add flavorings, you need to use products that are designed for use with chocolate.
Is Just Melt It! Kosher? Our manufacturer produces Just Melt It! with a Kosher Dairy (Kosher Kav) certification for our dark, milk and white chocolate and ships the product to us. We then simply repackage the chocolate in tubs or 30 lb. bulk cases. Even though our products never touch anything other than the equipment which has only been used for packaging the chocolate, we lose the official Kosher Certification. So, the official answer to the question is, yes it is Kosher Dairy, but technically it is not certified. Let your conscience be your guide. |
